1. Cut the chicken breast into small pieces and set aside.
2. Remove the outer layer of the lemongrass and cut into smaller pieces. Use a food processor to blend the lemongrass, garlic and dried chillies until they become a paste.
3. Heat up some oil in a pan and add the paste. Fry on low heat until fragrant.
4. Add the chicken pieces and continue frying until the chicken is cooked.
5. Add the tamarind paste, salt and sugar to taste. Continue frying until the serunding ayam becomes dry and crispy.
6. Serve with some nasi impit (compressed rice) or use it as a topping for your favourite dish.
