We stumbled upon this recipe and just had to try it out for ourselves. And boy, did it not disappoint! The combination of the crispy texture and the delicious sweetness of the kuih was just too good to pass up.

Ingredients:

  • 125g unsalted butter
  • 125g caster sugar
  • 50g honey
  • 125g all-purpose flour
  • 2 tablespoons milk
  • 150g flaked almonds
  • 100g dried cranberries

Instructions:

  1. Preheat oven to 180°C. Line a baking tray with baking paper.
  2. Melt the butter, sugar and honey in a saucepan over low heat. Stir occasionally until the sugar has dissolved.
  3. Remove the saucepan from the heat and add in the flour, milk, almonds and dried cranberries. Mix well.
  4. Using a spoon, place dollops of the mixture onto the baking tray (make sure to leave space in between as they will spread out when cooked).
  5. Bake for 12-15 minutes or until the edges are golden brown.
  6. Remove the tray from the oven and let it cool for a few minutes before using a spatula to transfer the kuih to a wire rack to cool completely.
