Victoria Sandwich Cake

The ingredients you will need are:

  • 225g unsalted butter, softened
  • 225g caster sugar
  • 4 medium eggs
  • 225g self-raising flour
  • 2 tbsp milk
  • 1 jar of your favourite jam
  • Icing sugar, to dust

Instructions:

  1. Preheat the oven to 180°C/350°F/Gas Mark 4. Grease and line two 20cm (8in) sandwich tins.
  2. Cream together the butter and sugar until pale and fluffy, using a hand-held mixer or freestanding mixer.
  3. Add the eggs one at a time, beating well after each addition.
  4. Sift in the flour and fold gently using a spatula until fully incorporated.
  5. Add the milk and fold again until the mixture is smooth and well-combined.
  6. Divide the mixture equally between the two tins and smooth the surface with a spatula or the back of a spoon.
  7. Bake in the middle of the oven for 20-25 minutes or until a toothpick comes out clean from the centre of the cake.
  8. Remove from the oven and allow to cool in the tins for 5 minutes before turning out onto a wire rack to cool completely.
  9. Once the cake is cool, spread your favourite jam over one of the sponges and sandwich the other sponge on top.
  10. Dust the top of the cake with icing sugar to finish.
