  • Black pepper, to taste
  • Vegetable oil

Instructions:

Now, let's start cooking! Follow these steps:

  1. Wash the rice well and soak it in water for 30 minutes.
  2. In a large pot, heat some oil over medium-high heat.
  3. Add the onions and cook until they become soft and golden brown.
  4. Add the chicken and cook until it turns brown on all sides.
  5. Add the garlic, ginger, cumin, and coriander. Cook for another 2-3 minutes.
  6. Add the tomato paste, bay leaves, and cinnamon stick. Stir well.
  7. Drain the rice and add it to the pot. Stir well.
  8. Add the chicken stock and bring it to a boil.
  9. Add salt and black pepper to taste. Reduce the heat to low, cover the pot and let it simmer for 20 minutes.
  10. Uncover the pot and add the raisins and almonds. Stir well.
  11. Cover the pot again and let it simmer for another 10 minutes or until the rice is fully cooked.
  12. Remove the cinnamon stick and bay leaves before serving.
