1. 4 chicken breasts

2. 4 cloves of garlic

3. 2 inches of galangal

4. 4 stalks of lemongrass

5. 1 onion, finely chopped

6. 6 dried chillies, soaked in hot water and drained

7. 1 teaspoon of turmeric

8. 1 tablespoon of sugar

9. 1 teaspoon of salt

10. 1 can of coconut milk

Instructions:

1. First, we gotta clean the chicken and cut it into bite-sized pieces. No need to get too fancy. Just make sure it's not too big, not too small.

2. Then, we need to blend the garlic, galangal, lemongrass, onion, dried chillies, turmeric, sugar and salt to form a smooth paste.

3. Heat up some oil in a pot and add in the blended paste. Stir it up until it smells oh-so-good and aromatic. It should take about 5 minutes or so.

4. Toss in the chicken pieces and stir for a few minutes until everything is evenly coated.

5. Pour in the coconut milk, give it a good stir, and bring it to a boil.

6. Cover the pot and let it simmer on low heat for about 30 minutes or until the chicken is cooked through and tender. Don't forget to stir occasionally.

7. Once it's done, serve it up hot with some rice and veggies on the side. YUM!
